Sometimes I wonder why everyone else seems to have more free time than I do. Then I'll be covered in flour and rolling out tortillas for dinner and I realize--most sane people buy tortillas. I do too, but most of the time I talk myself into making them from scratch. They taste that much better. Lizzy pretty much turns up her nose at all tortillas unless they are homemade. I'm giving you the recipe but also fair warning. It might be wisest to never try homemade and continue blissfully oblivious to what you are missing.
Homemade Tortillas (I usually double the recipe because small children love to come in the kitchen on snack on hot fresh tortillas)
2 cups flour (plus extra for rolling and kneading)
1/2 t table salt
1/4 t baking powder
1/4 cup cold vegetable shortening (kept in refrigerator)
2/3 cup warm water
Combine flour, salt and baking powder in medium bowl. Cut in shortening. Mix in warm water. Knead dough on floured surface until smooth and soft 3-4 minutes. Divide the dough into 8-10 equal pieces. Cover the dough balls loosely with plastic and let rest on the counter for 30 min. and up to two hours.
Roll out balls with flour to 9-10 inches round. Cook on skillet over medium heat until the tortilla bubbles and puffs and the bottom browns in spots 45-60 seconds. If any gigantic bubbles form, pierce them with a fork so the tortilla cooks evenly. Flip with a fork and cook another 45-60 seconds.

I remember helping you roll out tortillas once. It was worth the effort and they were delicious. We make them sometimes but ours are a thicker chewy kind not really meant to have stuff put in them. The rest of the time we buy the uncooked kind. We just can't go back to the kind that sit on the shelf.
We love homemade tortillas, too, but make do with the good enough kind most of the time. Have you tried the Porkyland ones you can buy at Costco in SD? They have to be cooked still, but it saves a couple steps for the nights you can't do scratch kind and they are pretty incredible tasting. They don't sell them out here, which was a big dissappointment (but has also helped my waistline--I like to snack on fresh cooked ones, too.)
There's a Mexican woman in our ward in her 80s who wouldn't dream of buying tortillas. She's beautiful, too--photos of her as a younger woman are jaw-droppingly stunning-- always wearing beautiful clothes with her make up and hair done. Anyways, she and you make me think of homemade tortillas as an elegant pursuit.
It's true, your tortillas are incredible. But I am not that ambitious-- not until March. ;)
